Sourced from the renowned Tarrazú region and processed at Beneficio San Diego, this coffee represents the modern wave of Costa Rican innovation. San Diego is widely considered the most modern mill in the country; while established in 1888, they are constantly pushing the envelope. They have mastered the art of processing at scale, allowing them to produce natural lots that are incredibly clean yet explosively fruity.
We love this coffee because it bridges the gap between the wild, funky naturals of Ethiopia and the structured, clean profiles of Central America. It is adventurous, but polished.

This is a "Natural" in the truest sense—dried in the cherry to soak up every ounce of fruit sugar.

Beneficio San Diego is a giant in the Costa Rican coffee world, but they operate with the precision of a micro-mill. They work with smallholder farmers across the Tarrazú and Tres Ríos regions, selecting cherries at peak ripeness to ensure only the best fruit goes into their natural lots.
This community-based model allows small farmers to access the high premiums that come with top-tier processing, creating a sustainable ecosystem for the region's producers.
